Let’s be clear: I’m not a Dry January person. It is the only thing I love more than sipping a gin-and-tonic while relaxing on the couch after a long day at work. I don’t have the willpower to do this every month when I’m asked to set goals for the remainder of the year. But I love a mocktail. I don’t need one night to enjoy it. Even if I choose not to have a cocktail, I still want to pour something special into my glass and settle down on the couch. Making coffee each morning is similar to the enjoyment of a cocktail. A lot of the pleasure in making a drink for yourself comes from self-care. No matter what your personality is — whether you’re able to commit to a month without alcohol, someone who likes to choose which nights they drink, or someone who believes mocktails should be just juice, there is one non-alcoholic drink that everyone will enjoy: bitters and soda.

Bitters and soda are a mixture of seltzer ( water or club soda – call it what you like! Bitters are a cocktail flavoring that is infused with herbs and spices. This simple cocktail still feels extraordinary, full of earthy complexity, subtle spices, and fresh fizziness. Technically, bitters are alcoholic. They’re typically between 35% and 45% ABV. Bitters are sold in small quantities and have a strong flavor. This is why most recipes only require a teaspoon or a few drops. You don’t even need to be 21 to purchase them. You can think of bitters as adding vanilla extract to a milkshake.
